I made this chickpea sallad the other day and it was divineeee. So easy too!
1 can of chickpeas
1/2 red onion
1/2 pack of Feta cheese
Pour out the gross liquid that's in the can with the chickpeas and soak them under water real quick. Let the water drip off and then shove it in a bowl. Slice the onion in however big pieces you want. I prefer it pretty thinly sliced, but whatever's your cup of tea. Put it in the bowl. Then slice the avocado in "squares". Put it in the bowl. Cut the cheese in small pieces, almost so it's like crumbles and then... Put it in the bowl! Mix everything and then add however much pesto you want and mix everything. Top with some fresh basil, salt and pepper.
Eat up! Either as a side or as it is. Omnomnom.
